A goat breed
of the highest standard

The province of Malaga can boast one of the most important indigenous Spanish goat breeds in the world: the Malaga goat. This breed has many attributes. Not surprisingly, it is one of the most highly valued in the country for its milk production and for the quality of the meat of the Malaga suckling goat. This breed has very good fertility rates throughout the year, with an average of almost two goats for each calving. The ‘Chivo Lechal Malagueño’ is a one-month-old animal, with a live weight of between 8 and 10 kilos and a carcass weight of between 4 and 6 kilos.

The most important characteristics of this breed are its high milk production, in quantity and quality, and its good adaptation to different farming systems, combined with its high hardiness.

The Spanish Association of Malaga Goat Breeders (CABRAMA), based in Casabermeja (Malaga), is officially recognised by the Ministry of Agriculture, Food and the Environment. It was founded in 1983 with the support of the Malaga Provincial Council and since then has been working to improve and disseminate the breed, managing its herd book.

In April 2021, the Spanish Association of Malaga Goat Breeders published new regulations and specifications for the ‘Chivo Lechal Malagueño’ brand owned by the Association. The new rules state that the use of the brand is subject to the use of the logo ‘100 % Raza Autóctona Malagueña’, granted by the Ministry of Agriculture, Fisheries and Food.

It is only ‘Chivo Lechal Malagueño’ meat if the product is accompanied by a certificate issued by the Spanish Association of Malaga Goat Breeders (CABRAMA), certifying that these animals meet the conditions laid down in these regulations.

Chivo or Cabrito Lechal Malagueño is a traditional food produced in the province of Malaga from goats of the Malagueña breed. The animal is approximately one month old, fed exclusively on milk, with a live weight of between 8 and 10 kg and a carcass weight of between 4 and 6 kg.

The meat of ‘Chivo Lechal Malagueño’, coming from a young animal, exclusively milk-fed, has a pale pink colour, a high degree of tenderness and juiciness, together with a mild and characteristic flavour, ideal for both traditional culinary preparations and haute cuisine.

It is a light feed, with only 2.5% of easily digestible intramuscular fat, more than 35% of which corresponds to oleic acid, and with more than 17% of protein of high biological value. Tender, delicate meat, with fine fibre, weak consistency, pleasant fragrance and natural source of iron.

Low fat

Goat meat is known for its low fat content compared to other red meats, making it a healthier option for fat-conscious consumers.

Rich in protein

It is an excellent source of high quality protein, essential for the maintenance and repair of body tissues, as well as for the proper functioning of the immune system.

Iron content

Goat meat contains a high level of iron, higher than other meats such as chicken or pork. Iron is crucial for the formation of haemoglobin, which transports oxygen to all parts of the body.

Vitamins

It provides a good amount of B vitamins, essential for the nervous system. It is also rich in minerals such as zinc, selenium and phosphorus, important for bone health and cell repair.

Low in calories

Compared to other red meats, goat meat is relatively low in calories, making it ideal for weight control diets without sacrificing essential nutrients.

Omega-3

Although the content may vary depending on the animal’s diet, goat meat usually has a good fatty acid profile, including omega-3 fatty acids, which are beneficial for the heart.
